Celebrity chef opens pan-Asian restaurant in Bothell

BOTHELL — Sushi Chinoise Asian Grill and Sushi Bar opened a week ago at Bearsdlsee Crossing.

Nationally known chef Thoa Nguyen announced last May that she had chosen Bothell as the location for her newest restaurant, picking a site at 19122 Beardslee Blvd., Suite 101, directly across from John Howie’s Beardslee Public House at the Beardslee Road-Highway 405 exit ramp.

“I know the area is ready for sushi and our pan-Asian favorites,” Nguyen said in a news release. “The population has grown to include Asian and non-Asian guests who want options nearby without having to travel to Seattle or Bellevue.”

The restaurant’s menu ranges from sushi to pho and wok dishes and summer salad rolls. The restaurant is set up for what Nguyen expects will be a robust demand for to-go ordering. She’s also offering catering.

She said that she liked the space because it is perched on a hill with natural lighting with floor to ceiling windows on three of its four sides. She painted accent walls dark gray, mocha brown and rustic orange. The sushi bar runs almost the length of the entire room.

The restaurant also features a seasonal patio on the Beardslee Village plaza.

Nguyen owns seven restaurants including two other pan-Asian ones in the Puget Sound area, Chinoise Cafe-Sushi Bar and Asian Grill in Issaquah Highlands, and Wabi Sabi Sushi Bar and Restaurant in Seattle’s Columbia City district.

Nguyen is a celebrity chef who has competed on the Food Network show Beat Bobby Flay where she beat the star with a her version of Korean rice bowl dish Bibimbap.
